Brabazon Restaurant Tasting Evenings

Brabazon restaurant goes the whole hogg with a new series of tasting evenings.

Last summer IFWG members spent a gorgeous day in a small corner of Co Meath visiting members of the Slane Food Circle before dining on some of their produce in the prettiest of settings in Brabazon Restaurant. The restaurant is on the grounds of Tankardstown House, a fine Georgian country estate set in eighty acres of tranquil parkland and with some meticulously restored walled gardens from which the kitchen gets much of its produce.

So we’re delighted to see the restaurant launch a series of monthly tasting evenings designed to celebrate local producers. Friday September 19th will see the launch of ‘The Friday Night Project’ at Brabazon Restaurant. Designed to celebrate local producers, ‘The Friday Night Project’ series will run on the 3rd Friday of every month when Head Chef Rob Krawczyk will champion a local food producer, using their ingredients throughout a five course tasting menu.

We’re even more delighted that our brilliant host for our summer outing, Peter Whelan of The Whole Hogg, is the first local producer to be featured. On Friday September 19th, Peter’s delicious pork will feature on the ‘surprise’ menu especially created by Rob Krawczyk for the evening. Guests will have the opportunity to sample some refreshing craft beers on arrival by BRÚ Brewery based in Trim, Co Meath. Peter himself, who is full of character will also be in attendance on the evening to give a little background to the rare breed pigs he rears, how he worked with Chef on the menu and chat with guests.

As a Chef, Rob’s philosophy is to present ingredients as close as possible to their natural state, providing an honest encounter between producer, Chef and guest. Since joining the Tankardstown Team as Head Chef, Rob is relishing the challenge of taking Tankardstown to a whole new level in terms of food. Drawing on the resources of the Tankardstown Estate, guests can expect to dine from menus with strong earthy tones, whilst the eastern coastline provides seafood straight from the shores.

Also kicking off in September, ‘Tasting Thursdays’ will run from 6pm every Thursday over the coming months. Guests will savour a delectable five course ‘Taste of Land and Sea Menu’ at a tasty price of €45 per person. This menu is carefully created to reflect the changing produce of the season, which is all sourced locally and organic where possible. The vegetables come from the walled kitchen garden at Tankardstown, whilst Rob himself enjoys engaging with the local forager seeking wild herbs, sea vegetables, and flowers from nearby forests and shores. He also spends a lot of time working closely with small artisan producers in order to obtain the best quality possible.
